Plum Thyme Cooler
3 ounces pureed plums
2 ounces gin (I used Booths)
1-ounce thyme simple syrup
1-ounce lemon juice
club soda
plum slices and thyme sprigs for garnish
For the thyme simple syrup:
1 cup water
1 cup sugar
5 sprigs of thyme
To make the thyme simple syrup:
Combine the water and sugar in a small saucepan. Melt the sugar and bring to a boil. Add the thyme sprigs and allow the syrup to boil for 10 minutes. Turn off the heat and allow to cool. Place the syrup in the refrigerator once cooled. Will keep, refrigerated, for 1 week.
To make the cocktail:
Fill a cocktail shaker with ice. Add the pureed plums, gin, thyme simple syrup, and lemon juice. Shake vigorously and pour into a glass. Top with club soda. Garnish with a plum slice and thyme sprigs.
