Chocolate Chip Cookie Ice Cream Sandwiches
(makes 8 ice cream sandwiches)
1 quart of vanilla ice cream
16 chocolate chip cookies
1 cup semi-sweet chocolate chips
1/2 cup slivered almonds
1 tablespoon sugar
(I've linked the recipes for homemade vanilla ice cream and chocolate chip cookies, but you can easily use your favorite store-bought ice cream and cookies for a super easy treat.)
Allow ice cream to soften a little and spread on a cookie sheet. Place in the freezer for 30 minutes until completely frozen. Place 8 cookies on another cookies sheet. Cut the ice cream with a biscuit cutter that is the size of your cookie. Place each ice cream round on the cookies and top with another cookie. Place the cookies back in the freezer for 30 minutes until completely frozen. Meanwhile, place the slivered almonds in a small saute' pan. Add the sugar and heat over medium heat. Stir the almonds until the sugar completely melts and starts to caramelize. Remove from heat and allow to cool completely. Melt the chocolate in a microwave-safe bowl for approximately 1 minute. Allow to cool, but not reharden. Remove the ice cream sandwiches from the freezer and spoon the chocolate on one end of the sandwiches. Add the slivered almonds to the melted chocolate. Place the sandwiches back into the freezer to allow to freeze completely again. Remove from the freezer 20 minutes prior to serving.
